His best main meal? Bierocks (aka a Runza). Sweet bread dough wrapped around seasoned hamburger and cabbage. So de-lish. So worth the work. So nice to pull out of the freezer for quick lunches. So Kansas-ish that most people have no idea what I'm talking about.
Sweet Rolls Dough
(Bierocks and/or Cinnamon rolls)
2 pkgs. Yeast
½ c. warm water ½ c. shortening
1 c. warm milk 2 eggs
Boil milk. Heat water and stir in yeast and 1/8 teaspoon sugar in small bowl and let stand until dissolved. Mix boiled milk, 2 c. flour, sugar, and salt in large mixing bowl. Add shortening and mix well. Add eggs and yeast from bowl and mix well. Add enough flour to make a soft dough which leaves the sides of the bowl. Turn out dough on a floured board. Knead until smooth and spongy, about 5-10 minutes. Let dough rest, covered, for 20 minutes. Can refrigerate for up to 24 hours. If refrigerated, let stand at room temperature for 10 minutes before baking. Can be used for cinnamon rolls, bierocks, or dinner rolls.
1 pound ground beef browned, grease removed
4 c. shredded cabbage
Seasonings to taste (salt, pepper, onion flakes, garlic powder)
Brown hamburger and onion. Drain grease. Add cabbage and cook until wilted. Add seasonings.
After dough has risen, roll out to ¼ inch thickness. Using a knife, cut into squares. Spoon cooked hamburger and cabbage mixture into center and wrap corners around pinching together until sealed. Can add cheese inside as well. Place on cookie sheet, seam side down. Cook at 350 for 15-20 minutes until golden brown.Enjoy!
